SINGAPORE – During the pre-Covid-19 days more than three years ago, I often took a five-minute drive during lunchtime from the office to a coffee shop in Bishan, where there was a stall selling an odd array of dishes with rice.

Although it was called Serangoon Nasi Padang, it was not your typical Malay rice stall.
